How many of you have been grocery shopping and when you arrive to the egg department and instant confusion rolls over your brain? There are so many choices; small, medium, large, extra large, and then jumbo. On top of that they are all priced differently. So, hypothetically speaking you have picked a size and price, now you have to worry about free range, cage free, organic (really organic eggs!) , barn laid, vegetarian, Omega 3, vitamin enhanced. Now what grade of eggs do you want A, AA, AAA…..holly crap, can you make it any harder?
From the great amount of knowledge I acquired in culinary school, I found out the quality of an egg is determined by the size of the air spaces. The freshness of an egg can be tested by placing it in a bowl of salt water. The fresh egg will lie on its side on the bottom, an egg one week old will lie on the bottom at an angle and eggs of two to three weeks will stand upright. Obviously, that is not something you will be able to do in a store. From my grocery shopping experience here is how I pick my eggs. First I find an average price, because you don’t want to go cheap and there would be no sense in paying the highest price for an egg. Next, I open the package up and make sure there are no broken eggs and I am on my way. Short and sweet, and I have never had a bad experience doing it that way. So, next time you are staring at the egg section for more than ten minutes remember this, eggs are eggs pick one.
